Apostrophe in email form renders as a square

I have an email form for an organization with an apostrophe in their title: LA's BEST. Their name is part of the standard email greeting. For example, Hello from LA's BEST.

My problem is that email programs like Hotmail turn the apostrophe into a square?

Any ideas on how to correctly code the apostrophe?

Hi,

If you are using HTML email then you can use the HTML codes for the character.

In the case of an apostrophe ' which is a single quote. This would be placed as:
[html]
LA's
[/html]
