C# data structure question

It is on WINCE. But should not matter.
I am binding a datagrid to a ArrayList using the datasource property
of the datagrid. ArrayList will contain data structures. The data
structure contains all the fields of a specific result set. The user
has the option to select the fields he/she wants. So the structue that
is contained in the ArrayList will change on the Fly. I am not sure
how to tackle this problem. Does anyone know how to add/delete iether
have a datastructure that be changed on the fly. I cannot use a data
array since binding in wince for my application requires a ArrayList
and should contain a structure for tabular purposes, there is no other
way. If anybody got any comments let me know.

What would give better performance, serializing a multidimensional array and storing it in a single entry in a table or storing each element of the array in a separate table and associating the entries with the entry in the other table?
