How do you set the "Timeout Period" in SQL Server 2005?

Depends on what timeout you mean, if you are using the ADO.NET Provider
you can set the connection timeput or the command timeout by the
appropiate properties.

SqlCommand.CommandTimeout
SqlConnection.ConnectionTimeout
