Datasets from Text files?

Can I create Datasets from text in text files? I want to save the data in
an encrypted text file, read it in and then put into some kind of Dataset
(or do I mean Data Adapters?) so I can look for specific records based on a
key column, change their values, insert new records etc.

Is this possible? How?
