What's in a full SQL Server backup?

DBA
If a full backup kicks off at 6pm within SQL Server, and takes 2 hours
to complete, will transactions between 6pm and 8pm be included in the
backup?

I can't speak for older versions of SQL Server, but with SQL Server 2000, no
log backups will occur during that time.
