How to choose SQL Collation for multi language

Hi, I am working on a web project that need to display and store 3 language: English, Simplified Chinese and Traditional Chinese, the web hosting company told me to find the SQL Collation Name from http://msdn2.microsoft.com/en-us/library/ms180175.aspx.

I am not sure which one should I choose or what I should do to make it work. I am using MS SQL 2005, ASP.NET 2.0, VS2005,

Any Idea? Thank you
