How could people enter a forbidden character in a form?

I saw on a website today, some people use a script like "<font size=40>Hello" to sign a big name. I tried but found "<" is a forbidden char. I also tried to use &lt; but when it came out it was still &lt; though on my screen it showed a "<" but in the source it was &lt; so it could not be run.

Does anybody know the trick?
