Get Subversion. It's been a few months since I switched from CVS to
Subversion here at work, for Java, PHP and TeX projects, and it
works like a charm. Installation might seem a bit daunting at
first, but here's an excellent guide to setting up a SVN server:

Concerning the GUI part, TortoiseSVN is the perfect GUI client for
Subversion, it integrates neatly with Windows Explorer. If you've
ever used TortoiseCVS, well, this is the Subversion counterpart.
Another GUI client for Subversion is RapidSVN:

SVN's basic workings are comparable to CVS (after all, it claims to
be the 'new' CVS), but I find that their principles are better
thought out, and more logically organised. Check the documentation,
it's excellent and will give you a jumpstart if you decide to work
with Subversion:
