GAC & Side-by-side Help!!

I'm having some issues understanding the GAC. I have little doubt I've over
complicated my problem, but here it is. I want to have a project reference
an assembly in the GAC. Then I want to add a new version of that assembly
to the GAC and have my project continue to use the old version. The problem
is that it seems to immediately use the new version. I've tried deleting
the reference from the solution explorer view and I've tried adding
reference via my app.config. But that approach isn't working. I suppose
I'm going to need that reference but my problem is when I register the next
version of the assembly, my app immediately uses it.
