what's the relationship between emailing using SMTP in IIS and using your own email server?

I'm sorry for the newbie question, but I've been wondering about this for a
bit. What is the relationship between having your own email server and
using IIS' SMTP services? Is there a point to it? Is starting the SMTP
services a potential security hole? Is it better to connect directly to
your own email server to send out emails?

If these questions illustrate my ignorance, please feel free to forward me
onto some links to help me learn.
