charset and collate

hi,
could anyone tell me as to what the charset and collate options in mysql refer to?

I hadnt set my option while creating tables but it took the charset as swedish or something? Does that make any difference or its fine?

Also, if i am gonna store html codes in the tables, then which one would be apt?
