How can we monitor device usage including apps and browsing?

We're looking at doing a trial of providing a set of health-care tools to patients. We're going to buy a set of tablets with cellular data plans and distributing them, first to employees, then to alpha testers. They will be using a set of pre-installed applications and web sites to interact with each other and us.

There are no privacy concerns during the trial, as it is all about seeing how they use the devices and tools on them, and the participants will understand that we are monitoring them.
  1. So, what options do we have for doing this?
  2. Are there any MDM tools that collect this depth of information, or do we need to install spying/monitoring apps?
  3. Is there any way to do this with iOS/iPads?
  4. What video chat apps would you recommend using?
