Time Sheet in Excel 2000

I am trying to design a Time Sheet in Excel. With a Start Time, an End Time, and a time standown (Lunch Break) But cannot seem to get the formula correct. I realise this is probably one of the simplest questions anyone has ever asked but I am a complete novice! I am writing the times in as 12 hour clock - so start time is entered as 8:35 AM and End Time is entered as 5:45 PM. PLEASE can you help?

Actually, time is a little complicated in Excel. I've shown parts of my own timesheet in this thread. Please feel free to try some things and post back here with any questions.
