How to setup email for my domain?

I am purchasing a domain name for about $2, and I also need email specific to that domain. So, if my domain name were

www.example.com

I need my email sent to

JohnDoe@example.com

The site where I purchase the domain name from charges about $25 for this email service. Do I have to buy it from them, or can I use JohnDoe@example.com and set it up myself using something open-source?

Do I own JohnDoe@example.com because I bought the domain name www.example.com?
