digital filtering

Does anyone out there have experience with digital filters (in theory or in practice). I've got my data and can run it through the filter just fine. I want to start optimizing perfomance wrt input frequency vs cutoff frequency and number of taps vs overshoot/ripple. Filter types are another thing I get to play with. I've started with butterworth, but have these types available:
'Butterworth', 'Chebyshev I', 'Chebyshev II', 'Bessel'
I'm looking for minimum overshoot, low pass, cutoff of 1 hz or less. The sample rate of the incoming data is fully adjustable as is the size of the data block.

I forgot to mention that this software models the Infinite Input Response (IIR).

Hmm, not realy my specialty, but heard of Matlab (http://www.mathworks.com/products/matlab/) that should support this type of dataprocessing.

I have the implementation. I'm using SciPy extentions to python. Matlab is also an option for Python. SciPy is free and works very well. I'm looking for tips on tuning the parameters (Sample rate, nTaps, nDataPoints).
