can I open a | delimited file without a schema.ini ?

I think I can but haven't seen an example. An app I inherited uses
schema.ini and it forces all the files to have the same name because of the
current format

[myfile.txt]
Format=Delimited(|)
....
I'd like to open any file using the same delimiter.
