Reading Contents of Server Controls In ASP.net

I would like to do some string manipulations after extracting the
content inside a tag to a string variable. something like this:

<asp:Test>
<key>testString</key>
<value>testValue</value>
</asp:Test>

i would like to extract the contents inside the server control tags.

i am new to this, so any help would be greatly appreciated.
