One way to do this is to hook the ItemCreated event.
if(e.Item.ItemType == ListItemType.Header)
{
// add a new DataGridItem to DataGrid Controls collection
}

As Martin mentioned, there is also the Repeater control, which gives
you much greater control over layout.
