A better question is this:
"Will your users fill out a 100+ field form?"
You might want to break it down into smaller chucks just for ease of use.
Think a "wizard" or sorts.

I'm sure it can handle it without a problem. The real questions are how
powerful is the server it's running on and what will the client's
connection speeds be? If those are powerful enough then all should be good.
