The Internet guest account is the account used by anonymous users when
accessing the web site. The ASP.Net account is the asp.net process in the
application. So, for example, you could give un-authenticated access to the
web-forms portion of your site which use and XML document, but you could
deny the IUSR access to the XML stuff directly, and only give ASPNET access
to it.
I have no idea if you can disable the IUSR on the applicaiton... it would
depend on if you have another security scheme for it, if un-authenticated
users need access, etc...
