Sending foreign language from a German Page

P: n/a

I have a form which has a check box on it and the name of the checkbox in
the source code is

When I submit this form to my email component and the email is sent out it
comes across in the email as:

What seems to be happening is any of the German characters like Umlats seem
to be converted and I was wondering if there is a way to prevent this from
happening. I am using JMail as the email component, any help would be
appreciated on how to prevent this from happening or explain why it happens.
