Software that does MS Access Data Documentation

More specifically, software that will build a data dictionary from a MS Access 2003 database and then create an XLS file of the tables that will include all of the relevant details of the fields (name, size, data type, description, etc.) for a more comprehensive document

Open the database,
select Tools | Analyze | Documenter.

Start with that...you'll probably get a lot of what you're looking for.
