Export to XML based on predefined schema

I am an XML virgin but I have had a couple of enquiries from people asking
if I could export Access data to XML but strictly adhering to a predefined
schema.

How would I do this? I presume I would need to create a query with column
headings that match the element names in the schema (I think). But how do I
merge the data from my query and the "stuff" from the schema in to one
perfectly formed XML document?

As far as I can see using "Application.ExportXML" is no good because it will
not bass it's output on a schema.
