I don't think you can hide the whole menu bar but take a look at the Tools > Startup options.

If you're looking to eliminate virtually all Menu Bar functionality in a Database App, create a Custom Menu Bar with minimum functions, then assign it as a Global Menu Bar via: Tools ==> Startup ==> Menu Bar
