format data type

I have table with a field named for a city. Is it possible for the
entries to auto uppercase the first letter? I know > will format all
upper case and < lower case. But is there one for "proper"?

The command you're looking for is StrConv using the vbProperCase constant.
It will change the first letter of each word to upper case and change all
other letters to lower case.
