I use Ben Forta ColdFusion Book big blue and white book. Plus use the macromedia getting started tutorials.

ColdFusion MX 7 Web Application Construction Kit by Ben Forta et al. There is an advanced version too,
Also, ColdFusion MX Developers Cookbook by Pete Freitag et al. This is more for the experienced developer but good for the beginner too as long as you know how to program.
Programming ColdFusion MX, Second Edition Creating Dynamic Web Applications by Rob Brooks-Bilson. This a good book but only version 6.1. If you want one that covers the latest version, go for the first one.

Also you can use the web resources, tutorials, etc. once you have a basic understanding of Coldfusion to help you in your programming,
