Email Admin Upon Form Submission

How can I set it to where when my form is successfully submitted, an e-mail is sent to my admin e-mail address to alert that a submit has occurred? Do you need to see the page the form is on?

On successful submission of form, add certain details regarding the submission in either a XML file or Database. Have another program periodically send the email to admin and change the status.
