Default Repost: Forms Problem

On my site at http://www.david-recipes.org/ , sometimes the dropdown
lists appear as I want them to, with the first entry of each list
visible in the window when the page loads, and sometimes the first line
of some of the lists is blank. It's not always the same list which
creates the problem. The problem seems only to appear in IE, not in
Opera or Firefox, but it's hard to be sure about an intermittent problem.

First fix the errors:

If the problem persists afterwards then you've encountered a bug in IE,
not something we can do much about.

OK, it's now valid HTML (validated at WDG first time around, and
validated at W3C after setting the encoding manually to utf-8).[color=blue]

I was hoping that somebody could suggest what's politely called a
workaround. In other words, a way I could get the visual effect I want.
